Rustic Florida Blueberry Cobbler

   For dessert, we’re sticking with blueberries for a true Southern favorite, Timineri’s Rustic Florida Blueberry Cobbler. Layers of sugary goodness go into this baked treat, which is topped with a flaky, golden brown crust. Pair this with a glass of Florida Sangria and a picturesque Florida sunset, and what more could you ask for?

Rustic Florida Blueberry Cobbler

4-6 servings

 

Filling

  • 1 stick butter
  • 1 teaspoon lemon juice
  • 4 cups fresh blueberries, rinsed and drained
  • 1 cup natural sugar

Topping

  • 1 cup self-rising flour
  • 1 cup natural sugar
  • 1 teaspoon natural vanilla
  • ½ cup low-fat milk

   Preheat oven to 375 degrees F. Place the butter in an 8-inch square glass baking dish (no substitutes) and melt in the microwave. In a mixing bowl, combine lemon juice and blueberries. Add the sugar and mix well. Add the blueberry mixture to the baking dish with the melted butter. Do not stir. Tip: Put cobbler baking dish on top of a foil-lined cookie sheet to catch any spillover during baking.

 

Make Topping: Combine all of the topping ingredients in a small bowl. Pour this mixture over the blueberries and bake for 45 minutes or until brown. Serve with fresh whipped cream or vanilla ice cream.
