Curried Chicken Skewers

Serves 20
Ingredients:
2 whole chicken breasts, split, skinned and boned
2 cups half-and-half
1½ cups mayonnaise
3 tbsp. mango chutney
2 tbsp. dry sherry
1 tbsp. sherry vinegar or apple cider vinegar
2 tbsp. plus 1 tsp. curry powder
1 tsp. turmeric
2 cups salted peanuts, finely chopped
Directions:
Arrange the chicken in a shallow baking dish. Pour the half-and-half over the chicken and bake at 350 degrees for 30 minutes. Let stand and cool. Combine the mayonnaise, chutney, sherry, vinegar, curry powder and turmeric in a blender and process until blended.
Cut the chicken into 1-inch pieces and thread the chicken pieces individually on wooden skewers. Dip the chicken in the chutney mixture and coat with peanuts. Chill, covered, for 30 minutes or longer before serving.
