Chocolate Tarts

Ambassador Nancy Brinker - Palm Beach Entertaining: Creating Occasions to Remember - Chocolate Tarts  

   Nancy Brinker, former U.S. ambassador to Hungary and founder of Susan G. Komen for the Cure, entertains in a style befitting her many roles. Her dinner parties often bring together political leaders, captains of industry, philanthropists and scholars, so it is imperative to fête guests in a warm and meaningful way. That often includes elements that are important to her—her wine glasses bearing the presidential seal, for example—and food that is both wholesome and elegantly prepared. Miniature chocolate tarts and other petite pastries are a thoughtful way to end a meal.

   The recipe is featured in Palm Beach Entertaining, a beautiful coffee table book released in September by Rizzoli. All proceeds from book sales benefit the Children's Home Society of Florida.

 

Chocolate Tarts

  Serves 4Chocolate Tarts - Palm Beach Entertaning - dessert resipe

 

  • 4 tbs. (½ stick) unsalted butter, at room temperature, plus more for greasing
  • ¼ cup powdered sugar
  • Pinch of salt
  • 1 large egg yolk
  • ½ cup all-purpose flour
  • ¼ cup unsweetened Dutch-processed cocoa powder
  • ¼ cup chopped bittersweet chocolate, melted
  • 1 tbs. brandy
  • ¼ cup heavy cream
  • 4 whole strawberries for garnish

   In a large bowl, beat the butter, powdered sugar, and salt together until pale in color. Add the egg yolk and mix well. Add the flour and cocoa powder and form the mixture into a bowl. Wrap in plastic and refrigerate for at least 1 hour and up to 3 hours.

   Preheat the oven to 350 degrees F.

   Roll the dough to a ¼-inch thickness and cut out 4 circles to line 4 holes of a muffin pan. Butter the pan and line with the chocolate dough. Place in the oven and bake for about 8 minutes, until the shell is cooked. Remove from the oven and cool in the pan until cool enough to transfer to a decorative serving platter or individual plates.

   In a small bowl, mix the chocolate and brandy together. In a medium bowl, whip the heavy cream until fluffy. Add the chocolate and brandy mixture and mix well. Divide the mixture among the chocolate shells and refrigerate until ready to serve.
