A proper Italian meal is more experience than dinner; something meant to be savored, remembered. When a dish is presented properly, ingredients are simple and stand on their own, unabashed by a cacophony of seasonings and marinades. An Italian dish is the result of passion, an Old World connection rooted in generations of Sunday gatherings, where the sauce recipe, though simple, may very well date back 200 years.
These traditions are never more apparent then when dining at Trevini Ristorante. The Palm Beach restaurant owned by Gianni Minervini and Claudio Trevisan, specializes in authentic Italian cuisine from northern and southern Italy, with stops in between. Most fine Italian restaurants dare not take on the competing flavors of such different regions, readily remaining in a comfort zone of Tuscan or Sicilian. Trevini don’t care for convention, which is what makes it different.
Stemming from the owners’ combined heritages—Trevisan hails from Stresa, a northern city near the Austrian border, while Minervini is from Bari, a southern city on the Adriatic coast—the menu at Trevini is varied, with influences encompassing the whole of the peninsula and Sicily. Classics like scaloppini Sorrentina—veal, eggplant and prosciutto in marinara topped with mozzarella—and sacollpine Marsala speak to restaurant’s southern influences, while dishes like galleto—seared Cornish hen with pommery mustard and steamed rapini—and polpettone (a Tuscan meatloaf served with sautéed escarole) counter with northern flair. But its in dishes like pollo piccata—succulent sautéed chicken cutlets served in a buttery pan sauce spiked with lemon and capers—and salt-encrusted Branzino where the menu seems to come alive. These dishes are simple in ingredients and construction but oh so good.
Trivini is an experience. From the meal set before diners to the setting—in the courtyard of the historic Bradley Park Hotel—it’s a place where guests aren't overwhelmed with the flourishes of Palm Beach dining but by the flavors on the plate.
