
JACK’S FAVORITE CAKE
Serves 18
Cake
- 2 cups all-purpose flour
- 1½ cups sugar
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 1 cup vegetable oil
- ½ cup buttermilk
- 3 eggs
- 1 cup stewed pitted prunes, chopped
- 1 cup chopped pecans
- 1 tsp. vanilla extract
Buttermilk Sauce and Assembly
- 1 cup sugar
- ½ cup (1 stick) butter
- ½ cup buttermilk
- 1 tsp. baking soda
To prepare the cake, sift the flour, sugar, baking soda, salt, cinnamon and nutmeg into a bowl and mix well. Add the oil, buttermilk and eggs and mix well. Stir in the prunes, pecans and vanilla. Pour the batter into a greased and floured 9x13-inch cake pan and bake at 350º for 30 to 40 minutes or until the edges pull from the sides of the pan.
To prepare the sauce, combine the sugar, butter, buttermilk and baking soda in a saucepan and bring to a boil, stirring constantly.
To assemble, pierce the top of the warm cake in several places with a fork. Pour the sauce over the cake. Cool in the pan on a wire wrack and cut into eighteen 2x3-inch pieces. This rich moist cake is a special nineteenth-hole treat for golfer Jack Nicklaus.
