Beat the Heat with Café Centro’s Key Lime Gelato

When the summer months bring Café Centro executive chef Jamie Steinbrecher key limes—a tinier, more sour version of the tropical citrus fruit—does he go the traditional route and make pies? Or perhaps a tart? No. He whips up key lime gelato instead, marrying the Italian dessert with a flavor synonymous with South Florida. The perfect refresher on the hottest of days, this simple combination of cream, sugar, and lime zest and juice arrives at the table topped with a raspberry coulis and graham crackers. “It’s unlike normal gelato,” says Steinbrecher. “I’m not a huge fan of sugary things, so I love that the tart key lime flavor sits above the sweetness.”
