Prepare to “meat” your maker. Chef Rick Mace of Tropical Smokehouse and chef Emerson Frisbie of Palm Beach Meats are taking on Wagyu for a special Brisket ‘n’ Fixins feast October 26 at Palm Beach Meats in West Palm Beach. The duo will smoke Japanese A5 Wagyu brisket and serve it on a platter accompanied by Japanese potato salad, apple and jicama slaw, Palm Beach Creamed Honey and buttermilk dressing, corn on the cobb with espelette, sumac butter, and Palm Beach Salt, and Red Splendor Farm biscuits and pickles from chef Daniel Ramos. The meal will conclude with a banoffee cream pie cup by chef Anna Ross of Anna Bakes, featuring Wagyu-fat-infused graham cracker crust, salted caramel, banana pudding, and vanilla whipped cream. Tickets are $129 per person (gratuity included) and can be purchased here.
