
Married entrepreneurs Carson Bennett and Amber Benjamin have grown one roadside stand in Key Largo into Guaca Go, a fast-casual dining experience specializing in “Florida fresh-Mex” flavors.
The couple launched Guaca Go in 2017 after selling fresh guacamole outside of the Caribbean Club in Key Largo. The concept gained a following, leading them to Palm Beach County and into mobile events, catering, and eventually brick-and-mortar locations in Boynton Beach, West Palm Beach and Delray Beach.
While diners are already familiar with Guaca Go’s house-made guacamole, customizable bowls, and clean ingredients, the eatery has big plans on the horizon. Guaca Go recently opened its first franchise location in Tequesta and has another scheduled to debut in Royal Palm Beach later in 2026.

Guaca Go also launched a new Florida Fresh-Mex menu inspired by the region’s coastal energy. The menu features chef-driven bowls, upgraded “Build Your Own” options, lighter grab-and-go items, and clean ingredients that remain gluten-free, vegan-friendly, and seed-oil-free. And always at its core: made-to-order guacamole!
Today, the Guaca Go mobile cart appears at some of South Florida’s most high-profile events, including WEF, the Cognizant Classic, spring training at Roger Dean Stadium, the Delray Beach Open, the Miami Open, and Formula 1 weekend in Miami.
