Trophy Room Kicks Off Culinary Collaborations

James Strine, the award-winning new chef at Trophy Room, will continue his Chef Collaboration Series at the Wellington restaurant on July 17 with Johan Svensson of Steak 954 in Fort Lauderdale.

The series features top chefs from the area, with a new chef joining Strine each month until October. Svensson’s career took off after a stage at celebrity chef Marcus Samuelsson’s Aquavit in New York City. The Top Chef alumn and Food Network regular mentored him and after holding several positions in prestigious kitchens, Svensson landed in South Florida. The chef, a native of Sweden, is best known for his dishes with Scandinavian flair. Together with Strine, the two will prepare some of Svensson’s signature dishes such as toast skagen with Key West shrimp and smoked trout roe, beet-cure gravlax, nettle soup, beef rydberg, and princess cake.

Strine cut his teeth at various restaurants around Palm Beach, including The Breakers, Grato, Buccan, and Café Boulud, where he worked for almost a decade. Most recently, he acted as chef at Hai House before bringing his talents to Trophy Room.

Foodies can look forward to these talented chefs from across the county sharing their greatest hits at Trophy Room: Eric Baker from Mazie’s on August 14; Rick Mace from Café Boulud on September 18; and Tim Lipman from Coolinary Café on October 16. Reservations are encouraged.
