After a year-long closure to all but a private group of guests at the Four Seasons Resort Palm Beach, the hotel has reopened to the public—and with it, onsite restaurant Florie’s.
“Everyone who visits Florie’s should feel like they are seated at my very own dinner table,” chef Mauro Colagreco said in a release. Florie’s is the first and only restaurant and bar in the United States in partnership with Colagreco, a globally acclaimed chef who has been awarded three Michelin stars. “We are ready, more than ever, to say welcome home.”
Drawing on inspiration from both the surrounding Floridian flora and Colagreco’s passion for gardening, Florie’s is best known for serving fresh ingredients and lively flavors in an elegant oceanside setting—all with a bit of Mediterranean spirit sprinkled throughout.
For spring, Colagreco’s menu celebrates Florida’s coastal environment as well as the verdant bundance of the season with new dishes such as Maine scallops yakitori with rice cream, spinach, and lemon zest; D’Artganan Green Circle chicken à la broche with green peas, Florida lemon, and potato mousseline; and treats such as mille-feuille with bourbon crème chiboust and caramel toffee.
Not to be missed, Florie’s Bar features seasonal cocktails and sustainable wines. In honor of the property’s return, Florie’s Bar also premiered its Botanical Guide, developed by head mixologist Matthew Dress. The artfully crafted selection features 16 floral-inspired and garden-driven cocktails grounded in botanical varieties that pay homage to their locale of origin as well as Florida citrus—plus fresh ingredients from Florie’s garden.
Patrons will also notice some new faces this season. Colagreco has appointed his protégé, Nino La Spina, as chef de cuisine. Having most recently served as head chef at Colagreco’s Grand Coeur in Paris, La Spina is well-versed in his mentor’s cuisine. Florie’s has also welcomed industry veteran Christopher Monaco as its new general manager.
