In just over a year, Sour Seed Bagels in downtown West Palm Beach has cultivated a devoted following, drawing long lines during season that will instantly remind New York transplants of the city’s famous queue culture. But owner Chris Slawson has perfected the line in more ways than one, starting with what patrons are waiting for: 100-percent organic sourdough bagels that are individually hand-shaped and topped with everything from wild Alaskan sockeye smoked salmon to butter and jam or preserved lemon and Calabrian chili cream cheese (an absolute must).

Choose from plain, everything, or sesame bagels, as well as a gluten-free and vegan bagel made with an organic brown rice and sorghum flour starter. Other crowd-pleasers include a classic bacon, egg, and cheese breakfast sandwich, tuna and egg salads, and The Garden, loaded with cream cheese, cucumber, tomato, pickled red onion, dill, parsley, capers, salt, pepper, olive oil, and lemon. Those waiting in line can grab a complimentary parasol for shade, while those who have secured their bagels can settle in at one of the many outdoor tables. Â
