Boca Resort Debuts Two Inspired Dining Experiences

The resort debuted a lively dining experience in the redesigned Lobby Lounge and delectable Mediterranean fare at Marisol

The Lobby Lounge

Boca Raton Resort & Club debuted two dining concepts by lifestyle impresario Colin Cowie in the new year. The eateries, Marisol and the Beach Club lobby lounge, are highly anticipated components of the property’s $150 million renovation.

The resort’s light-filled, ocean-chic lobby opens to the reimagined 2,500-square-foot Lobby Lounge. The lounge features several indoor and outdoor seating areas, each with an inviting atmosphere that evolves from dawn to dusk. The dining experiences move from sun-drenched lattes and lunches during the day to an alluring candle-lit environ for Mediterranean-inspired shareable mezze plates and sushi in the evening.

“The guest’s journey is paramount in whatever I do. As I began to envision the Beach Club, a resort that I have always loved, it was important for me to truly redefine the experience by appealing to all five senses,” said Cowie. “We thought through every detail beginning from the moment a guest steps out of a car and curated every touchpoint, from the menus and décor, to the couture uniforms and the custom scent infused throughout the space.”

Steps away from the sand, Marisol sets the scene for seaside lunch and dinner, inspired by Cowie’s love for la dolce vita and iconic beach clubs situated along the Mediterranean. Marisol’s menu is anchored in fresh seafood, like flavorful local Pompano with Persian cucumber, minted herb salad, freekah tabbouleh, and lemon salmoriglio.

Chef Andrew Roenbeck partnered with Cowie to curate a menu that captures the simplicity and freshness of the cuisine found throughout the Mediterranean region. An extensive wine list, featuring more than 25 wines by the glass, complements the inspired menu.

“There is nothing more fabulous than a leisurely oceanside lunch with great company, delicious food, and of course, rosé,” notes Cowie. “Marisol offers the most idyllic and glamorous settings all inspired by my favorite destinations including Greece, Capri, and Cap d’Antibes.”
