Cheese & Provisions in Jupiter is a cheese lover’s paradise

Last spring, the Chris Marshall, Jupiter chef and caterer, expanded his Hampton Forks location to establish the area’s most innovative cheese shop, Cheese & Provisions

There are those who think they know cheese, and then there’s Chris Marshall. Last spring, the Jupiter chef and caterer expanded his Hampton Forks location to establish the area’s most innovative cheese shop, Cheese & Provisions. He carries between 40 and 60 varieties at any given time, but quality definitely dwarfs quantity. “I don’t want to have everything,” says Marshall. “We focus on small-production items you can’t get anywhere else. Our cheeses are farm-direct and shipped in by next-day air. The transportation sometimes costs more than the cheese.”

His passionate approach allows him to carry gems such as Tunworth (an English variant of Camembert), Keen’s Farm Cheddar from Neal’s Yard Dairy in London, and Honnalee (a rich cow’s milk cheese similar to French Tomme) from Briar Rose Creamery in Oregon. Marshall has his personal favorites, too. He’s partial to Harbison, a soft-ripened cheese made by Jasper Hill Farm in Vermont, as well as Shropshire Blue from Neal’s Yard. “It’s super-creamy and always hand-ladled. Even people who hate blue cheese love it.”

All selections are purchased in full wheels and hand-cut for customers. Apart from the seriousness of the cheese, the atmosphere is casual: Diners may order to go or sit at a long, communal table and enjoy a cheese board, sandwich, or small plates. The wine selection is limited but curated. “When you think about it, these cheeses are like wine,” says Marshall. “They reflect the place where they’re grown.” (hamptonforks.com)
