Sushi by Bou at PGA National Resort in Palm Beach Gardens hosts an intimate and lively omakase experience. Inside a dimly lit, speakeasy-style space, a 12-seat counter brings patrons closer to the chefs, who excitedly explain each dish as they prepare it at the sushi bar in front of you.

Featuring fresh fish that is sustainably sourced both locally and globally, each of the 12 courses references a unique flavor and texture that comes alive on the palate. Traveling from the savory Salmon Roe, which pops with a boba-like texture, and ending with a tangy version of BBQ Eel that melts with flavor, you’re left reeling with an aftertaste of exploration. All of this is further complemented by a splash of Bou’s colorful, Asian-inflected cocktails, premium sakes, or Japanese whiskies.

Exciting techniques, such as flash-cooking Wagyu with a blowtorch or garnishing Albacore Tuna with pop rocks for a bit of crunch, keep you waiting eagerly for the next experience.

If these 12 courses aren’t enough, you can consider a “Boulicious Extra.” With options like the Marrow-Kissed Toro from Spain, topped with hot marrow dripping from the bone, or the hefty 10-gram Caviar Bump Kit presented with a mother-of-pearl spoon, you’re likely to be satisfied. Sushi by Bou even offers a sweet conclusion to the night with their Bouzy Ice Cream, infused with Japanese spirits and available in three flavors: yuzu blossom, whiskey ganache, and the “non-bouzy” kokonasttsu.

Sushi by Bou has numerous locations across South Florida, each with its own theme ranging from Art Deco to vintage 1920s prohibition.
