French bistro Pistache in downtown West Palm Beach is hosting themed culinary events, beginning with a Bouillabaisse Night, July 29. For $38 per person, plus tax and gratuity, diners will savor the flavors of the Mediterranean with chef de cuisine Mike Burgio’s Provencal fish stew, inclusive of local monk fish, clams, mussels, and shrimp in a saffron seafood broth, served with a rouille crostini. Guests can substitute the monk fish for one half lobster at market price, and the chef will also have such à la carte classics as torchon de foie gras; soup au pistou; panise; and Provencal pasta with shredded lamb shank on the menu as well.

Return to Pistache for Moroccan Night, August 12, when chef Burgio will serve up menu items that reflect the country’s unique culinary history. Think: beef kofta with mint salad; roasted eggplant with harissa yogurt, pomegranate, mint, and sumac; chicken tagine with olives and preserved lemon couscous; and chermoula-rubbed mahi-mahi with a trio of Moroccan vegetable salads.

Pistache will also host a Night in Spain, August 26, with more details to come. Click here to reserve your spot.
