After living through decades of ups and downs in the housing market, real estate attorney Rick Felberbaum decided to pursue his true passion: ice cream. He found there was no one locally making the style he liked, so he dedicated himself to what he describes as “traditional ice cream the way it was meant to be,” using pure cream, whole milk, and zero additives. His newly opened Delray Beach shop, Proper Ice Cream, offers flavors of ice cream, gelato, and sorbet as simple as chocolate or as exotic as olive oil, rosemary, passion fruit, and salted caramel. A lifelong foodie, Felberbaum was trained at Penn State’s ice cream school and recently developed a vegan version, too.
