
Most of us have experienced the phenomenon of finishing a bag of chips and somehow still wanting more. For years, I assumed this was a willpower problem. That is, until I learned that many ultra-processed foods are intentionally engineered for extreme palatability and maximum consumption. The result is a uniquely modern paradox: we can consume more calories than ever while feeling surprisingly unsatisfied.
Flavor Engineering
If there is one term worth knowing when it comes to ultra-processed foods it’s “bliss point,” the precise combination of sugar, salt, and fat that increases dopamine in the brain and leads to cravings. Many ultra-processed foods are engineered around this principle, turning eating from a biological necessity into a highly optimized consumer experience. Researchers test everything from crunch acoustics and mouthfeel to meltability and craveability. Some products even exploit a concept known as “vanishing caloric density,” wherein they dissolve so quickly in the mouth that the brain struggles to accurately register how much has been consumed. Furthermore, many processed foods are designed to require minimal chewing, which may weaken satiety signals, as the act of chewing itself plays a role in triggering fullness hormones.
Full, Not Satisfied
Fullness and satisfaction are no longer the same thing. Our stomachs may signal that we’ve consumed enough calories, yet our brains continue searching for something more. Researchers believe part of the explanation lies in sensory-specific satiety, the brain’s tendency to lose interest in food after repeated exposure. Many ultra-processed foods disrupt this by keeping the sensory experience novel with every bite. This is why you can consume an entire bowl of cereal almost absentmindedly, while a meal of steak and vegetables produces a much clearer sense of completion. A 2019 study from the National Institutes of Health found that participants eating ultra-processed diets consumed roughly 500 more calories per day than those eating minimally processed diets. The takeaway: build meals around foods that look more like ingredients than inventions.
Why Whole Foods Feel Different
Whole foods tend to create a sense of completion because they naturally contain protein, fiber, water, and structural complexity that slow digestion and give the body’s satiety systems time to respond. As a result, many people describe whole-food eating as calmer, quieter, and less mentally consuming. Ultra-processed foods often produce the opposite effect, amplifying reward signals while delaying the physiological cues that tell us we’ve had enough.

Crispy Veggie Chips
Ingredients
- 1 beetroot
- 1 zucchini
- 1 carrot
- 1 sweet potato
- 1 turnip
- 1 tsp. salt
- 1 tsp. pepper
Thinly slice the vegetables with a knife or mandoline. Toss with salt and pepper. Arrange in a single layer on a parchment-lined baking sheet. Bake at 400 degrees Fahrenheit for 10 minutes, flip, then bake for 5 to 10 minutes more until crisp and lightly browned.
